This is a must try recipe. I am a die hard fan of mashed potatoes and gravy. I was leery of trying a new recipe, because I felt like nothing would compare to mine :) However this recipe sounded so interesting, I had to try it. I will never make them a different way again. These were SOOO good!!
Ultra Creamy Mashed Potatoes
3 1/2 c. Swanson Chicken Broth
5 large potatoes (about 2 1/2 lbs) cut into 1 inch pieces
1/2 c. light cream
2 Tbsp. butter
Generous dash black pepper
Optional:
1 can Campbell's turkey gravy heated
1. Heat the broth and potatoes in a 3 quart saucepan over medium-high heat to a boil.
2. Reduce heat to medium. Cover and cook for 10 minutes or until potatoes are tender. Drain potatoes well in colander, reserving the broth.
3. Mash the potatoes with 1/4 cup reserved broth, cream, butter and pepper. Add additional reserved broth if necessary, until desired consistency. Serve with the gravy and enjoy!!
